The colour is deep, intense, and pretty much showing its age. The nose is full, concentrated, and much influenced by Merlot, with very ripe (but not overripe) blackcurrant notes as well as nuances of smoke, leather, fur, cedar, and forest floor. The wine starts out rich, full-bodied, and velvety on the palate, accompanied by an impression of sweetness. Although the great freshness implies that the wine still has a long way to go despite its 30 years, the 1985 vintage is also a delight to drink now, and superbly aromatic. The aftertaste is beautifully long and balanced. May and June were more mild, but it continued to rain until the 15th of July.  Thereafter, a long period of beautiful, very dry weather set in.  Just 30 mm of rain fell between the 15th of July and the 20th of September – as compared to an average of 120 mm. There were a few showers in late September, but the month was, on the whole, quite dry (48 mm, as against 81 mm in a normal year). The weather was mild in early October, with some rain, but cumulative precipitation was still low for the first half of the month. The overall growing season in 2012 was very similar to 2000: the first half was rainy and the latter half very dry. Furthermore, temperature patterns for both vintages are astonishingly similar. The average temperature during the vegetative cycle in 2012 was 18.5°C, i.e. 0.6°C above average.\u003c\/p\u003e\n\u003ch3\u003eWATER BALANCE\u003c\/h3\u003e\n\u003cdiv class=\"contenu\"\u003e\n\u003cp\u003eIn order to grow well, the vine needs for water stress to set in slowly so the grapes to ripen well and become concentrated. The water regime showed a contrast between a very wet spring and early summer without any water stress and a dry end to the season with marked water stress.  The water deficit was great up until the 30th of September, and 2012 is the sixth driest vintage in the past 60 years, between 1989 and 1990 (a little more dry), and 2000 and 2003 (slightly less dry). Even if there were several short rainy spells during the harvest, cumulative precipitation was still very low for this period (19 mm).\u003c\/p\u003e\n\u003ch3\u003eGROWING SEASON\u003c\/h3\u003e\n\u003cdiv class=\"contenu\"\u003e\n\u003cp\u003eBud break took place slightly later than usual, on the 30th of March for Merlot and the 5th of April for Cabernet Franc. Shoot development was very uneven in April due to poor weather.\u003cbr\u003eConditions were fine at the outset of flowering in late May, although there were showers on the 2nd of June.  For this reason, flowering ended up being somewhat uneven and spread out. Mid-flowering occurred on the 1st of June for Merlot and one day later for Cabernet Franc. Vine growth was slow in June and July. Véraison (colour change) took place several days later than usual (the 5th of August for Merlot and the 11th of August for Cabernet Franc). The beautiful weather in August and September were ideal for ripening. The harvest began on the 27th of September for Merlot and the 6th of October for Cabernet Franc. It lasted until the 13th of October. 2012 was thus a fairly late-ripening year.\u003c\/p\u003e\n\u003ch2\u003eFeatures of the vintage\u003c\/h2\u003e\n\u003cdiv class=\"maturite-raisins\"\u003e\n\u003ch3\u003eRIPENING AND YIELDS\u003c\/h3\u003e\n\u003cdiv class=\"contenu\"\u003e\n\u003cp\u003eThe beginning of the growing season was difficult due to uneven bud break and flowering, as well as a strong attack of mildew.  However, any worries were dissipated by the return of beautiful weather starting in mid-July. Vegetative growth came to a halt in early August in most plots, creating good conditions for ripening. The light showers in late September and early October did not endanger to crop’s excellent potential, which remained fine until the end of the harvest.\u003cbr\u003eThe berries were close to normal in weight and yields were slightly less than average.  The grapes had a balanced constitution with good sugar levels, but not to excess, as well as a high phenolic compound content.  Both Cabernet Franc and Merlot were very successful.\u003cbr\u003e2012 is unquestionably a very good vintage at Cheval Blanc.\u003c\/p\u003e\n\u003cdiv class=\"vinification-elevage\"\u003e\n\u003ch3\u003eCELLAR WORK\u003c\/h3\u003e\n\u003cdiv class=\"contenu\"\u003e\n\u003cp\u003eThe wine underwent no saignée (bleeding from fermentation vats), and was not chaptalised.  It contains no press wine and was entirely aged in new oak barrels for 18 months.\u003cbr\u003eTraditional fining with egg white was done in order to settle particles in suspension in barrel. Two egg whites per barrel were used. The beautiful weather in August and September were ideal for ripening. The harvest began on the 27th of September for Merlot and the 6th of October for Cabernet Franc. In Bordeaux, the extremely low temperatures during the night of 26-27 April caused most of the damage. The last time Bordeaux was affected by such an intense frost was in 1991. Thanks to its location, only 30% of Cheval Blanc’s vineyards were affected. Unfortunately, the same cannot be said for the majority of the vineyards in the Gironde.  Following the trauma of this event, the team at the property acted fast to deal with the affected areas.  Each of the frozen vines was marked and pruned for a second time to encourage the growth of a second batch of grapes. These efforts were rewarded by exceptional weather during the summer and up until the end of the harvest. Most of these second batches of grapes reached perfect maturation and were used in the blends of Cheval Blanc and Petit Cheval. A great relief for the teams in the vineyards who had worked meticulously throughout the growing cycle. After a dry January, the weather in February and March was normal. April was another extremely dry month followed by very wet months in May and June (205 mm). Apart from the frost in April, temperatures were normal for the season. July and August were fairly dry with moderate temperatures whilst average rainfall in September helped the grapes to mature perfectly. The harvest was finished in October in glorious weather.\u003c\/p\u003e\n\u003ch4 class=\"h4\"\u003eWATER BALANCE\u003c\/h4\u003e\n\u003cdiv class=\"contenu\"\u003e\n\u003cp\u003eThe water regime throughout the season had a positive impact on the quality of the grapes. The heavy rainfall in June built sufficient reserves for the vegetation to flourish during the dry months of July and August. More than usual rainfall in September enabled the ripening process to progress whilst a dry month of October provided ideal conditions for the grapes to reach perfect maturity. Although to a lesser degree than in 2013, 2014 and 2016, by 30 June the vintage was declared a wet one thanks to the heavy rainfall in May and June which followed the dry month of April. But, following the wet start in the growth cycle, July and August were very dry and the 2017 vintage proved to be a very dry one. By 31 August, 2017 was recorded as the sixth driest vintage since 1952, keeping company with vintages such as 1989, 1990, 1995 and 2010. By 30 September, 2017 was placed in 12\u003csup\u003eth\u003c\/sup\u003e\u003cspan\u003e \u003c\/span\u003eposition ranked along with 2016, 1986 and 1998. Normal weather conditions in September helped the grapes to reach maturity by the middle of October, in very dry conditions. All three ‘terroirs’ at Cheval Blanc responded well to this water regime and it had a lot less negative impact upon the gravel soils than was the case in 2016. The extremely dry summer prevented the vines from growing too quickly. The harvest spanned over a long period between 6 September and 11 October. The dry summer and the clement weather at the end of the season helped the second batches of grapes to mature perfectly too.  The vineyards were in good health.
