Acquerello Il Riso is regarded as the world’s finest Carnaroli rice, produced by the Rondolino family on their historic estate in Piedmont, Italy. Cultivated, aged, and packaged entirely on the estate, Acquerello represents the highest expression of Italian risotto rice.
What distinguishes Acquerello is its patented aging process and the reintegration of the rice germ after milling — a unique technique that preserves nutritional value while enhancing cooking performance. The rice is aged for a minimum of one year, allowing the starch structure to stabilize and deliver exceptional creaminess without losing firmness.
