A package consists of 3 1kg-packs of frozen suckling lamb sweetbreads.
Sweetbreads are the offal considered to be the noblest of suckling lamb.
Present on the most prestigious tables, suckling lamb sweetbreads are an exceptional product.
We advise you to prepare them “bouchettes à la reine” style with a chorizo emulsion.

AXURIA LAMB
The cooperative has been a lamb specialist since its creation in 1983. Axuria milk-fed lamb benefits from the most recognized quality labels, the Label Rouge and the IGP. He is born and raised on a single farm and feeds exclusively on his mother's milk by suckling from the udder and receives no other food. Any preventive or curative health treatment is prohibited. The production of milk-fed lamb and heavy lamb comes from ancestral local breeds: -The Manech tête noir -The Manech tête rouge -The Basco-Béarnaise All of our breeders are located in the Basque Country and Béarn. From mid-June to September, the sheep transhume towards the high Pyrenean mountain pastures and benefit from rich pastures. Lamb meat is appreciated for its finesse and taste. Although many consider it an exceptional and festive dish, lamb can be served on all occasions and consumed all year round.
