Tasting notes

- Nose : Complex with aromas of cherries and blackcurrant.
- Mouth : Round and balanced, very fruity and persistent
- Food and wine pairings : Served at 12°C, with summer dishes: grilled meats, salads, “carbonara” pasta and soft cheeses

- Type of soil: Clay-limestone
- Age of the vine: 8 to 36 years
- Size: Single Guyot
- Planting density: 4400 plants/ha
- Harvest: mechanical at night
- Average yield: 60 hl/ha

- Alcohol: 12.5%
- Residual sugar: 2.5 g/l
- Total acidity: 3.45 g/l

Winemaking
Each grape variety is vinified separately. Destemming, pneumatic pressing. We only use free-run and first-press juice. Fermentation for 2 weeks at 17°C. The wine is aged on fine lees with regular stirring for 40 days in stainless steel and cement vats coated with epoxy.
