Official Description
Livarot AOP is a historic washed-rind cheese produced in the heart of Normandy from raw cow’s milk. Recognized by its cylindrical shape and encircling reed bands, Livarot is one of France’s oldest named cheeses.
The cheese undergoes repeated washing during ripening, which gives it its characteristic orange-brown rind and powerful aroma. Despite its assertive scent, the paste remains supple and creamy.
Tasting Notes
Texture Soft, elastic, and slightly sticky beneath the rind.
Flavor Savory and complex with lactic sweetness, vegetal notes, and light bitterness.
