Mild, Sharp or Sharp Selection

Provolone Soresina is a delicious stretched-curd cheese available in the log-shaped or mandarino-shaped format with its characteristic cuts. Wheels of Provolone Soresina age in environments at controlled temperature and humidity to allow a perfect ageing process to take place. Which one will you choose? Mild Provolone, aged for a maximum of three months, Sharp which is aged from three months to a year or more, or rather the Sharp Selection, a provolone unique for its taste and fragrance? Latteria Soresina

The time-honoured tradition of stretched-curd cheese, from the South to the heart of the Po Valley. Today as in the past.

Provolone cheese came into being in the Po Valley towards the second half of the 19th century from the happy encounter between the cheesemaking culture of stretched-curd cheeses from southern Italy, and the dairy tradition of our region. After the unification of Italy, the settlement of entrepreneurs from the South, who had moved their production activities to the provinces of Piacenza, Cremona and Brescia, allowed the culture and consumption of stretched-curd cheeses to spread throughout Italy and the world.

Since 1900, we at Latteria Soresina have been committed to carrying this tradition forward. Starting with the certified fodder we feed our cows to ensure their utmost well-being and the local milk collected solely by our members in the heart of the green Po Valley. And continuing on to production, strictly done by hand as it once was. But there’s more: a supply chain agreement ensures attentive monitoring throughout the entire production cycle with preventive actions and periodic checks.

Mild Provolone Soresina cheese

 

We use a special rennet to create Mild Provolone Soresina cheese, carefully controlling the short ageing process. We still make it by hand with milk from our cows and certify it through supply chain controls that respect the environment.
