Maison Loste Saucisson Sec “Le Pavé au Roquefort” 250g
Official Description
Le Pavé au Roquefort by Maison Loste is a traditional saucisson sec sans boyau — a dry-cured sausage made without casing (skinless) and with a coarse mince. Its distinctive Roquefort-inspired flavour makes it a natural favourite for cheese and charcuterie lovers, bringing together the savoury richness of cured meat with the character of blue cheese.
Compact, flavourful, and easy to slice, this 250g pavé format is ideal for gourmet snacking, casual apéro boards, and elevated wine-and-cheese nights at home.
Tasting Notes
Appearance Rustic block-shaped saucisson with visible coarse minced meat and fat, slices showing attractive marbling.
Aroma Savoury cured meat with gentle blue-cheese notes, lactic tones, and a hint of cellar and spice.
Palate Firm yet yielding texture, rich pork flavour, balanced salinity, and a distinct Roquefort character that adds depth without overpowering.
Finish Long, savoury finish with lingering umami, light spice, and subtle blue-cheese nuance.
Pairing Ideas
- Wines: Light to medium-bodied reds (Beaujolais, Pinot Noir), fruity Rhône reds, crisp whites (Sauvignon Blanc, dry Riesling), or off-dry whites that play nicely with the Roquefort notes.
- Cheeses: Roquefort and other blue cheeses, Brie or Camembert, Comté, and aged Gouda for contrast.
- Gourmet pairings: Rustic baguette or sourdough, unsalted butter, fig jam or onion confit, walnuts, and cornichons.
- Barrels & Beyond PH suggestions: Build a French-inspired apéro board with this pavé, one soft cheese, one hard cheese, a touch of sweetness (figs, grapes, or jam), and a bottle of Burgundy or Beaujolais from our wine selection.
Serving Suggestions
For best flavour, remove the pavé from the fridge and let it rest at room temperature for 15–20 minutes before serving. Slice into thin or medium rounds using a sharp knife, and serve on a board with bread, cheese, and pickles.
This saucisson is ideal for casual grazing with wine, pre-dinner apéritifs, or as a flavour-packed element in larger charcuterie spreads.
