Michel Couvreur Candid Single Malt Whisky proves once again that Michel Couvreur is the French master of whiskies - with his Candid 2006, he's created an absorbing malt candid, which sits mellow in the mouth and glides across the palate. Matured in repurposed Pedro Ximenez sherry casks, each drop has an intense complexity and sense of worldliness.
Malt distilled in 2006 and matured in deeply humid caves within intensely Pedro Ximenez impregnated media botas (250 liters).
Four selected casks blended together to obtain regularity of taste. 53% natural strength decreased at bottling time to 49% per volume. Amber tint with ruby reflections. Mellow with roasted almond notes with a soft pungency. Floral and intense nose.
If you like active wood and peat look no further! Lots of spices, fruit, a very interesting saline note in this profile and a very rich texture as with most Roofers. A committed style but which sends and that we really liked for its gourmet and sweet / salty side.
The malts that make up this whiskey are aged in half PX sherry casks.
TASTING NOTES
On the nose there is an attack of vanilla caramel that one would not necessarily expect on PX. Then we go into a world already more standard to expectations. Sweet spices (cinnamon and ginger), dried fruits with grapes, nuts, some citrus peels. We find a malty and slightly grassy side, then we find a buttery tone. All this being perfectly surrounded by a present but subtle oily peat. A saline side also emerges.
In the mouth we find the Christmas cake side, with butter, spices, dried fruits. The peat becomes liquorice and then ashy. The salty side is still present as the fruits go to play on new grounds. Cherry, black fruits, and grapefruit show themselves as we finish on a peppery note.
The finish is long, on citrus, black fruits, spices and peat.
