Locust bean gum, also called locust bean gum, is obtained from the seeds of the carob tree known as Ceratonia siliqua, which is widely cultivated in the Mediterranean area. It is extremely versatile as a thickener or viscosity modifier, water absorber, suspending agent and stabilizer. Provides excellent resistance to heat shock and soft melting in ice cream products. In the manufacture of soft cheese, it increases the coagulation speed and the yield of solids in curds by 10%. The finished cheese has excellent body and structure, consistency in pH, and is more homogeneous. Spreadable cheeses, made with high water content, mixing 1% to 2% gum, are more refined and have good palatability and superior spreadability. Used in cakes and biscuit doughs, it gives a higher yield, with a considerable reduction in the number of eggs needed. Finished cakes and biscuits are softer and maintain their freshness for much longer. Cakes are more easily cut into slices without crumbling and are easier to unmold. It is also used as a stabilizer and thickener in sauces and dressings. It acts as a binder in meat masses such as mortadella bologna, making the product more homogeneous, with greater stability and smooth texture. Making it easier to extrude and fill. Pastry fillings for the purpose of thickening, particularly in fruit fillings. While it prevents the fillings from flowing out of the dough, it yields a more frugal filling and does not mask the flavor.
