GUAR GUM (E412): Polysaccharide of natural origin, produced from the guar bush ( Cyamopsis tretagonolobus ) found in Pakistan and India.
Thickening, stabilizing and emulsifying agent. It hydrates when cold, improving hydration when heated.
It is used to improve the production of dairy, meat and ice cream products.
In pastry, it reduces the syneresis due to thawing of fillings, improves the mixing of panic doughs, reducing the mixing time.
