Its name, meaning "Monk's Head," pays homage to the monks of Bellelay Abbey, who began producing this remarkable cheese more than 800 years ago. Protected by the Appellation d'Origine Protégée (AOP), every wheel is made exclusively within its designated region using fresh raw cow's milk and traditional craftsmanship.
Unlike most cheeses, Tête de Moine is traditionally not sliced. Instead, it is gently shaved into delicate rosettes using a Girolle®.
