Whole grapes without destemming start with a maceration in open wooden vats; over there the fermentation is carried out exclusively with the natural yeasts; the total of these two processes maceration and fermentation lasts about 20 days. HAS at the end, everything is pressed in a pneumatic press.
Breeding
The "new" wines are barreled in oak barrels for about 20 months, they carry out their malolactic fermentation.
