- ON NOSE
- The opening bouquet is complex and luminous, a mingling of white flowers, citrus and stone fruit. The overall effect is enhanced by the freshness of aniseed and crushed mint. The final aromas offered by the wine are starting to show spicy, woody and roasted notes.

- ON PALATE
- After a long period of reluctance, the wine is finally opening up. There is complete balance between the nose and the palate. Its slender, minimalist, pure, toned, athletic character is now also expressed with warmth. The fruit is pronounced and clear. The vintage's characteristic acidity is remarkably well integrated. Its persistence is mainly aromatic, grey, smoky and highly promising.

- THE HARVEST
- 2008 was dominated by grey, overcast skies – an exception in a decade characterized by bold, generous sunshine. Just when the harvest was getting underway, the weather conditions were finally perfect: blue skies and prolonged north-northeasterly winds. The grapes were riper than anyone dared hope, and had truly outstanding balance. The vines were in perfect health.
2008, AN INSOLENT MIRACLE
Gray, overcast skies dominated the viticultural year in 2008, a notable exception in a decade of brazenly generous sun. Spring and summer were marked by a relentless lack of both light and warmth. And then, September made the vintage thanks to a late and miraculous spell of beautiful weather. As the harvest began on September 15, conditions were at last perfect – bright sunshine and sustained north to north-easterly winds. Grape picking continued over an extended period to take full advantage of this unexpected gift. The maturity of the grapes surpassed all expectations, revealing an exceptional high-toned balance.

A RADICAL ASSEMBLAGE
Dom Pérignon liberated the 2008 vintage with a bold assemblage created with pinot noir grapes. Whose fruit and structure balance the tension between the precision and natural radiance of the wines with more body and weight.


TEMPERING POWERFUL VITALITY
The bouquet bursts forth with raspberries and wild strawberries. Persistent powdery notes of iris and violet immediately meld with the fruit aromas. After breathing, greener nuances arrive, evoking privet, angelica and camphor tree. The initial sensations are tactile, full-bodied and silky as they unfold like a caress, gradually becoming bolder. The acidic foundation that is the signature of the vintage weaves into the structure of the pinot noir, vibrating the heart of the wine. The affirmed, persistent finish is redolent of peonies and white pepper.

Dom Pérignon Rosé Vintage 2008 is an invitation to explore frontiers in winemaking, and boundaries of gastronomic experiences. With Alain Ducasse and Albert Arià as part of the ADMO partnership, we have created an ideal pairing of cauliflower lightly coated with black mole, inspired by Mexican cuisine with its preparation of cocoa, grilled herbs and spices. This gives a spicy, concentrated, rich and challenging aspect that the wine loves for its depth, structure and bodied ingredients.
