Manual harvest
Pneumatic press after severe sorting.
Fermentation in oak barrels.
Breeding
16 months in oak barrels including aging on lees
for 10 months.
A racking 10 months later to separate the clear wine from the deposit.
This wine has been filtered.
Tasting and Accompaniment
Long perfumes of honey and white flowers, elegant and fine. This wine goes well with fish and seafood; or as an aperitif. Consume within two to three years.
