Artisan Manchego DOP Cheese. Made from raw milk manchega sheep and matured between 6 and 8 months in Finca la Prudenciana (Tembleque). hard cheese with rind marks from the ‘flor’ and ‘pleita’.
The cured cheese has a natural rind. We spread olive oil in the cheese rind stimulating the mold growth, reaching a unique maturing process and obtaining as a result an intense flavor in the cheese but still with a texture that facilitates the cutting and handling of the cheese.
Our rinds do not have PYRAMICIN or NATAMYCIN.
Aunque no es recomendable el envasado al vacío ya que modifica las condiciones organolépticas del queso, su textura y sabor, en quesos como el Curado o el Añejo, su efecto no es tan significativo
