How to use: Mix cold in the liquid base without fat content and disperse with vigorous stirring. To achieve a uniform and stable assembly, it is convenient to do it with an automatic rod assembly machine. Improves mounting characteristics by hydrating the product for 24 hours before mounting. It can be used both hot and cold.
Application: Any aqueous liquid regardless of its pH (fruit and vegetable pulps, smoothies, defatted broths, flavored waters...) In liquids that contain enzymes, these deactivate the building power and it is necessary to deactivate them by heat (70 °C) before to incorporate Potatowhip.
Remarks: High solubility. Great air retention capacity. Substitute for the mounting capacity of egg white or albumen. Suitable for vegan, ovo-vegetarian and ovo-lacto vegetarian diets. Coagulating capacity in proportion 8% from 55 °C.

DESCRIPTION

A powdered aerating agent derived from flavorless potato protein. For optimal use, mix the product with a liquid and use it as a plant-based alternative to albumen. Can be used hot or cold. This texturizing agent gives preparations an aerated, foamy texture, but it can also emulsify and coagulate them. You can use this product to make sponge cakes, macarons, marshmallows, mousses, biscuits and more. We recommend adding 1-4% of your mixture's weight to emulsify or aerate it, or up to 8% to coagulate.
