Bollinger SPECTRE Limited Edition Millésime 2009 was created to mark the release of the James Bond film SPECTRE. The 2009 vintage was reserved for this special edition and presented with distinctive 007 branding.

The blend draws on Grand Cru fruit from Aÿ, Verzenay, Le Mesnil-sur-Oger, Avize and Cramant.

The wine was fermented in small used oak barrels in keeping with Bollinger's traditional methods. The release was disgorged in February 2014.

Appearance

Deep gold, reflecting the maturity of the vintage and Bollinger's winemaking style.

Nose

White flowers and citrus followed by ripe pear, vanilla, toasted notes, hazelnut and brioche-like aromas.

Palate

Mature yet lively, with candied fruit, Mirabelle plum, quince paste and honey.

Finish

Structured and persistent with a distinctive bitter-orange note.

Serve at approximately 8–10°C in a tulip-shaped Champagne glass. Allow a few minutes in the glass for the mature fruit, toast and nutty complexity to open.

Pair with lobster, roast poultry, seared scallops, mushroom dishes, aged Comté or rich seafood preparations.
