From sturgeon reared using organic production methods in our facilities in Riofrío (Granada) for over 18 years. Russian Style Caviar Riofrío is produced in keeping with the purest tradition, with a light maturation, no preservatives and minimal salt. Our Riofrío Caviar is inspired by the 'Malossol' production process, a Russian method that consists of adding only 3-4% salt during production. This Russian tradition has been maintained since the time of the Tsars, and also entails a short maturation process, giving the caviar an even more powerful flavour.

The Adriatic sturgeon or 'sollo' is the species we work with. It is an indigenous species that had almost disappeared, but which we have managed to revive in captivity. After 18 years of breeding our fish, we extract Caviar Riofrío, a true treasure for you to discover in your own home.
