RIOFRÍO CONFIT STURGEON
Fresh sturgeon preserved in La Chinata Organic Extra Virgin Olive Oil, which comes from controlled organic farming. It is certified by the C.R.A.Ex. (Agro-Food Regulatory Council of Extremadura) and has obtained the European Union's Organic Agriculture certification. Our sturgeon is handcooked in extra virgin olive oil of the highest quality, with a touch of smoking to achieve a unique texture and flavour.
This traditional preserve is mild in texture and flavour, perfect for pairing with salads and vegetable dishes. Long shelf life and easy to store.

The sturgeon is one of the oldest living animal species, around 250 million years old. One of these species, Acipenser naccarii, is one of the many sturgeons that inhabited the rivers of southern Europe and Spain. It has been in danger of extinction due to indiscriminate fishing.
Its very nature, as well as our natural production system (certified organic), make the meat of this sturgeon particularly heart-healthy and of an unusually high gastronomic quality within aquaculture production.
