Product Description

Kishu Binchotan is a traditional Japanese white charcoal produced in Wakayama and prized for the intense, controlled radiant heat it provides for professional grilling.

This Jokomaru selection consists of premium fine-round pieces chosen for greater uniformity and an approximately 3–4 cm diameter. Its dense structure allows it to maintain steady heat over extended grilling sessions while producing minimal unwanted smoke and odor once properly ignited.

Particularly suited to Japanese grilling techniques where control and purity of heat are essential, Kishu Binchotan allows the natural flavor of the ingredient to remain at the forefront rather than introducing a heavy smoky character.

Recommended Uses

Ideal for yakitori, robatayaki, kushiyaki, yakiniku, grilled seafood, premium meats and vegetables. Particularly suited to konro-style grills and professional charcoal grilling applications where intense radiant heat and precise control are desired.


Lighting & Use

Binchotan is extremely dense and takes longer to ignite than ordinary lump charcoal. For best results, ignite thoroughly using a charcoal chimney, gas burner or an established bed of hot charcoal before transferring it to the grill.

The charcoal should be fully glowing before cooking. Arrange the pieces according to the heat zones required for the food being prepared.


Storage & Safety

Keep dry and store in a cool, well-ventilated place away from moisture and sources of ignition.

For outdoor use or properly ventilated commercial cooking environments only. Burning charcoal produces carbon monoxide. Never use in an enclosed or inadequately ventilated space.
