Pitted Black Kalamata Olives
Pail 1.8kg
Unlike many other Greek cities, Kalamata does not date back to classical times. It only became important after the Byzantine era when, due to its ideal position, the Franks and Venetians came to govern it. After the Second World War it saw a period of decline due to some political problems that favored the economic development of other parts of Greece. During the 70s and 80s, however, development and growth finally brought a wind of change to the forgotten capital of Messinia, and Kalamata has now developed into a modern provincial capital, with a great cultural heritage and many facilities and amenities.

Dedicated packs of olives, pestoes, lupins, artichokes and dried tomatoes for restaurant professionals: Hotel Restaurants Coffee

In this section we find in addition to lupins, green and black olives in bags also spices, herbs and vegetables of first quality useful for enhancing Mediterranean cuisine: dried chilli and oregano, capers in salt, caper fruits , marinated garlic, dried tomatoes and pesto with PDO Genoese basil. The origins of pesto with basil alla genovese seem to date back to the Middle Ages, in fact there was a sauce that can be considered an important ancestor in the diet of the Ligurians, but recipes of real pesto date back only to the nineteenth century. Pesto was already a sauce for pasta. Pesto has reached a great diffusion in the world thanks to the merchant ships and the passengers who sailed from the port of Genoa to the most diverse destinations. Although much importance was given to garlic in the ancient recipe, today's pesto is more balanced, with a marked presence of the delicious Ligurian basil. Today, as then, pesto is an exquisite condiment for pasta dishes but it can also be spread on canapés and bruschetta. Furthermore, due to its particular qualities, it has a protected designation of origin. Instead, we recommend using spices and aromas Madama Oliva to enhance the dishes of Mediterranean cuisine including dried chilli and oregano while to highlight and characterize the main courses of meat, fish or pizza we recommend using salt capers, caper fruit or marinated garlic.
