Official Production Method

Murcia al Vino D.O.P. begins with milk from Murcian goats, a breed historically selected for milk production and particularly suited to cheesemaking.

The milk is filtered and coagulated before the curd is cut, washed and gently heated. The curd is then worked to the required consistency, placed into moulds and pressed.

The cheeses are salted in brine before entering maturation, during which the defining red-wine maceration takes place.

During ripening, Murcia al Vino D.O.P. is macerated in red wine from Murcia made from the local Monastrell grape variety.
