What Makes Fleur de Sel Different

Fleur de sel crystals are more delicate than coarse salt crystals. Their lighter, finer texture allows them to penetrate food more easily and dissolve more quickly.

Fleur de sel from Malagasy salt pans is the result of meticulous craftsmanship and ideal climatic conditions. A thin layer of white crystals forms on the surface of the salt pans as water evaporates under the combined action of sun and wind.

Compared with regular refined salt, fleur de sel is moister, crunchier, more granular, and more subtle in flavor. Regular salt offers a more intense saltiness, while fleur de sel is milder and more elegant. Fleur de sel also naturally contains minerals that are removed from many refined salts.

Origin Story

Nicknamed “Africa with Asian eyes,” Madagascar is an island of giant trees, unusual wildlife, and indigo-blue lagoons. The Ifaty salt flats are located in a small corner of paradise in the southwest of the island, far from pollution.

The Vezo, a semi-nomadic fishing people, saw their marine resources diminish and turned to the harvesting of another treasure of the sea: fleur de sel.
