The tonka bean selected by Terre Exotique enhances sweet and savory recipes with its Amazonian aromas. Tonka beans offer captivating notes of sweet almond, vanilla, caramel and even coffee, with a smooth, warm flavor and a subtle bitterness reminiscent of cocoa. Terre Exotique Tonka beans are very mild and not spicy.

Tonka beans contain coumarin. In high doses, coumarin can be harmful to health. The tolerable daily intake should be less than 4.8 mg per day for a 60 kg adult.

Use with care: the flavor of tonka beans tends to intensify upon cooling. Grate it like nutmeg to enhance your dishes, then taste and adjust.

How to Use

Tonka beans can be used in compotes, creamy desserts, with chocolate, in pumpkin or butternut squash soups, or even with sweet potatoes. Grate finely (as you would nutmeg), or infuse into dairy or syrups, then strain.

Chef tip: Start small. The aroma builds and becomes more pronounced as preparations cool.

Origin Story

The tonka bean is found in the Amazon rainforest, nestled inside the fruit of trees in the Fabaceae family, more specifically Dipteryx odorata (also called “Coumarou”). These giant trees can reach up to 30 meters and thrive in warm tropical climates with fertile, humus-rich soils.

The ripe fruits fall to the ground and are collected by villagers. The kernels are extracted from the pit and dried for several days to obtain the tonka bean. It takes approximately 600 fruits (or 10 kg of fruit) to produce 1 kg of dried tonka beans.

In Brazil, tonka beans (also called “cumaru”) are traditionally used for medicinal purposes and in candles, incense, perfumery and tobacco. In perfumery, its sweet fragrance has been used since the late 19th century, and it remains a signature note in classic fragrances.
