Handpicked harvest. Traditional maceration in concrete vat at 28°C with soft extraction methods (regular pumping over, delestage at the beginning of the fermentation). Hot post-fermentation maceration at 30°. Regular tastings to decide when to run off warm wine ; malolactic fermentation in barre Color : Bright red with purple hints Aromas : Fine and elegant aromas : fresh fruits (blackberry, blackcurrant, raspberry), spices and licorice Palate : Elegant tannic structure with a lot of fruits flavours. Ageing in barrels gives smoky, spicy and vanilla notes.
