The processing of mozzarella morsels

The  main processing phases of mozzarella morsels  can be summarized in the following points:

  • the buffalo milk is pasteurized at a temperature of around 85° C;
  • lactic acid is produced through the addition of rennet and lactic ferments;
  • after letting the product obtained rest, a compact surface is obtained;
  • the curd is broken into many parts within the whey;
  • the product obtained is left to rest again until the solid part separates from the whey
  • the curd liquid is eliminated through the draining phase;
  • an optimal Ph value is reached after the curd is heated in a chamber at approximately 45°C with 100% humidity
  • the curd is transformed into stringy paste with water at around 85°
  • the curd is cut into strips and chopped and then mixed inside tubs;
  • subsequently the product obtained is cut into many small mozzarellas;
  • the mozzarella morsels are immersed in brine for the salting phase
