Description

Valrhona 60% Hazelnut Paste is a smooth professional praliné paste with a high proportion of Italian hazelnuts. Valrhona describes it as delicately sweet, with soft caramel notes, while its professional catalogue highlights particularly intense cooked-caramel character and only a slight impression of sweetness.

Its balance of concentrated hazelnut, caramelized sugar and natural vanilla makes it suitable for pastry, chocolate, confectionery, gelato and restaurant dessert applications requiring pronounced praline flavour without excessive sweetness.
