Description
Valrhona Absolu Cristal Neutral Glaze is a professional finishing product designed to provide pastries and desserts with exceptional shine, a refined surface texture and dependable hold.
Its transparent appearance and neutral flavour allow the colour, flavour and visual identity of the underlying dessert to remain prominent. It may be used as a clear finishing glaze or combined with chocolate, fruit, purées, juices, infusions, colourings and other ingredients to create customised finishes.

Official Neutral Spray-Glaze Method
Valrhona’s published neutral spray-glaze formula uses:
- Absolu Cristal Neutral Glaze: 600g
- Water: 60g
- Combine the Absolu Cristal and water.
- Bring the mixture to a boil.
- Apply immediately using a spray gun at approximately 80°C.
This represents a ratio of approximately ten parts Absolu Cristal to one part water.
Official Chocolate-Glaze Technique
For a chocolate glaze, Valrhona recommends first preparing a properly emulsified ganache. An elastic, glossy centre indicates that the emulsion has formed correctly.
Heat the Absolu Cristal to approximately 70°C and incorporate it into the ganache using a blender. Blend carefully without incorporating air. Any remaining bubbles should be removed to maintain the glaze’s smooth appearance and shine.
Official Indicative Application Temperatures
- Dark Chocolate Glaze: Approximately 30–35°C
- Milk or Blond Chocolate Glaze: Approximately 28–30°C
- White Chocolate Glaze: Approximately 26–28°C
Pour the glaze over the dessert, remove the excess with a spatula and smooth the surface as required.
